Prime Rib is the ultimate holiday indulgence meal. It’s surprisingly easy to make and impressive to serve. This is our traditional Christmas dinner in our home. This recipe makes a a delicious fork tender roast. I usually accompany it with a dipping sauce and serve it alongside with scalloped potatoes.
Prime Rib
Closed oven method for perfect prime rib!
Ingredients
- 1 Prime Rib Roast (with or without bones)
- 1 stick butter, room temp
- 1 tablespoon salt
- 1 tablespoon pepper
- 1 tablespoon optional additional spices (garlic powder, prime rib seasoning mix, herbs de Provance, etc)
- 2 tablespoons optional chopped herbs (rosemary, thyme, etc)
Directions
- The night before, remove all packaging and let the roast dry out in the fridge on a platter overnight. Record the weight of the roast. You’ll need it to calculate how long to cook the roast for.
- The day of, pull the roast out of the fridge and set it on the counter to let it come to room temp 4-6 hours prior to cooking.
- Slather the roast with the room temperature butter and spices. Place the roast in a rack in a roasting pan.
- Roast in a 500-degree F oven for: 5 minutes/pound for medium rare, 6 minutes/pound for medium, or 7 minutes/pound for well done. (Total cooking time is usually less than one hour)
- Once the roast is done cooking, DO NOT OPEN THE OVEN DOOR. Turn off the oven and leave the roast in the oven for 2 hours. Do not open the oven door until then.
- At the end of the 2 hours, remove the roast and slice it into servings.
- It’s delicious served with aus juice, horseradish sauce, etc.
Tips & Tricks: Make sure your oven is clean, or the high temps will smoke you out of your house. Do not open the oven door at any time during the cooking or resting period. This makes for a beautiful crusted, tender, and perfectly cooked prime rib.
Cream Cheese Horseradish Sauce
This recipe is modified from the heb.com recipe for creamy horseradish sauce.
Ingredients
- 8 ounces cream cheese, room temp
- 1/3-1/2 cup horseradish, graded
- 1/4 cup mayonnaise
- 1/4 cup stone ground mustard
- salt & pepper
Directions
- Combine cream cheese, horseradish, mayonnaise, and mustard in a bowl. Blend until smooth.
- Can be made ahead and stored in the refrigerator. Best if served at room temp.
